Yummy Breakfast Potatoes

4 russet potatoes, diced into 1/4" cubes
1 smal onion, finely diced
3 Tbs Olive Oil
Salt & Pepper to taste
1/2 tsp Smoked Paprika
1 tsp Herbes De Provance
1 Tbs fresh Italian Parsley

In a skillet add the Olive oil and sautee onions until transluscent
Add potatoes, spread around making sure the potatoes are in a single layer to brown easier
Season with Salt & Pepper and the Herbes De Provance
Cover and let it cook in medium heat for 5 min.
Uncover and stir potatoes
Add Paprika, taste for flavor, add more salt if needed
Cover it again and let it cook for anoter 5 minutes if potatoes are not done
You want the potatoes to hold their shape, yet fork tender
When potatoes are done to your taste, add parsley and serve with your favorite Breakfast items

Optional ingredient: You can add pieces of turkey breast, bacon, or ham to the potatoes as it is cooking to add some protein and complete the meal.

This can be served at any meal, not just breakfast. It makes a great side dish for roasts and any meats.
