These look scrumptious, don't they? Shrimp made at the Beach in Bahia, Brazil !
Grilled Pinapples

1 large ripe pineapple
1/2 cup brown sugar
1 tsp vanilla extract
1/2 stick of butter
1 cup orange juice

Peal and core pineapples
Slice it lengthwise, set aside
Melt butter with sugar and orange juice
Add vanilla
Coat pineapple slices into sugar mixture
Reserve leftover mixture

Grill pinapple slices to your taste
Coat the pinapple with leftover sugar mixture
Serve warm or cold.

Rose's Brazilian Black Beans

1 lb dried black beans, soaked for at least 1/2 hour
1 Tbs olive oil
3 strips of bacon or salted pork, diced
3 garlic cloves, minced
1 large bay leaf
1 medium onion, diced
1/2 package of Kielbasa Sausage, 1/2" slices
water
salt and pepper to taste

TIP: If using a pressure cooker, beans don't have to be soaked for more than 1/2 hour. But if you choose to use some other pot instead of pressure cooker, the beans need to be soaked at least 3 hours, prefferably overnight. Rinse beans prior to soaking. You may use the bean water to cook with if you want your beans really black. If not, just drain the soaked water and add fresh water to the pot when needed.

COOKING METHOD:
In a pressure cooker add the oil and bacon/salted pork, let it render its juices :)
Add sausage cut in 1/2" slices
Add onions and garlic, sautee for 2 to 3 minutes
Add bay leaf and rinsed black beans
Add water to cover beans about TWO fingers above the beans: Be careful not to add too much or too little water. Too much water will give you runny beans and too little may scortch the beans as it is cooking.
Cover the pressure cooker and let it cook for at least 1/2 hour before opening to check doneness.

TIP: the longer the beans are soaked in water the faster the cooking process :)

Add salt and pepper at the end of cooking process. Adding the salt before the beans are cooked may prolong the cooking process because the salt hardens the beans a little.

Serve it with a fresh batch of white brazilian rice(recipe is on the blog as well)

Yummy Breakfast Potatoes

4 russet potatoes, diced into 1/4" cubes
1 smal onion, finely diced
3 Tbs Olive Oil
Salt & Pepper to taste
1/2 tsp Smoked Paprika
1 tsp Herbes De Provance
1 Tbs fresh Italian Parsley

In a skillet add the Olive oil and sautee onions until transluscent
Add potatoes, spread around making sure the potatoes are in a single layer to brown easier
Season with Salt & Pepper and the Herbes De Provance
Cover and let it cook in medium heat for 5 min.
Uncover and stir potatoes
Add Paprika, taste for flavor, add more salt if needed
Cover it again and let it cook for anoter 5 minutes if potatoes are not done
You want the potatoes to hold their shape, yet fork tender
When potatoes are done to your taste, add parsley and serve with your favorite Breakfast items

Optional ingredient: You can add pieces of turkey breast, bacon, or ham to the potatoes as it is cooking to add some protein and complete the meal.

This can be served at any meal, not just breakfast. It makes a great side dish for roasts and any meats.

Brazilian Rice
1 cup white long grain rice
1 1/2 cups hot water
half of a small onion
1 clove crushed garlic (optional)
1/2 teaspoon of Knnor chicken bullion powder (or 1/4 of a cube)
3 tablespoons canola oil

Directions
Rinse the rice in water
Drain well and set aside
In a small saucepan sautee onion and garlic in oil until soft
Add the bullion powder (or 1/4 of bullion cube)
Add the rice, stir well to coat every grain of rice with oil
Add the water, bring it up to a boil, cover it...AND DON'T PEAK...
Let it simmer for 20 minutes on low heat.
Uncover and fluff rice with fork.
Serve with black beans and your favorite meat and veggies

But, there is no better time to change our way of thinking than today! We can prioritize and organize ourselves to make quick and yummy meals for our our families and friends. If you have any tips and suggestions, blog them along! This is our time to have fun and enjoy our lives by eating healthy and delicous meals with those we love!

I was born in Rio de Janeiro, Brazil where I lived for 15 years. On September 1988, my family moved to America in search of the "American Dream". I am now married to my dear husband, Tom, with a blended family of 6 children. They keep us pretty busy. Life has been interesting thus far. I was once told by a wise man that if I were to share my talents with those around me, I would find happiness and joy in my life. So, here I am willing to share this awesome talent with all my friends around the world.
